Princess Castle for a Princess!!

I made this cake for my bestfriends 27th birthday!! It was a laugh and was so easy! Just look up Wilton's castle cake video on youtube and get going! The only thing I would recommend is possibly putting a big chopstick or something down the middle for extra support...I nearly lost the top tier in the car a few times!

Tramper's Oat Slice

My mum asked me to make something for her to take to morning tea at work, so I made my dad's fav slice! I got the recipe in the Dominion Post a couple of years ago, and it has become my dad's absolute favourite.  The blurb before the recipe says that the recipe was developed by Deb Baxter who owned a cafe in Blenheim. Its a real sort of muesli/granola health bar!!

Ingreidents:

125g butter (room temp)
1 C sugar
2 Tbsp golden syrup
1 egg (lightly beaten)
1 C flour
1 tsp baking powder
1 C desiccated coconut
1 C rolled oats
1/2 C sultanas
1/2 C firmly packed, roughly chopped, dried apricots
1/2 C pumpkin seeds
1/2 C sunflower seeds
2 Tbsp lemon juice
finely grated zest of 1/2 lemon

Method:

1. Pre heat oven to 180 degrees celcius
2. Grease and line a 30cm x 20cm sponge-roll (brownie) tin
3. Place butter in bowel with golden syrup and sugar, beat until pale and creamy
4. Add egg until combined
5. Add flour, baking powder, coconut, oats, sultanas, apricots, seeds, lemon juice and zest, beat till combined.
6. Place into prepared tin, and using plam of hand, press mix evenly into tin.
7. Place in pre-heated oven and bake for 35-40 mins, or until light golden brown and firm to touch.
